Salisbury Steak & Gravy

This is a quick easy meal that you could even make on a weeknight. I use ground elk meat when I make this, but I’m sure you could use ground beef or venison too. You can complete this meal in about 30 minutes. This meal will have your family thinking you spent all afternoon in the kitchen. Dice some potatoes to start cooking first so you’ll have mashed potatoes done at the same time and then add a quick side veggie or salad.

Ingredients

  • 1 to 1 1/2 pounds of ground elk (beef or venison)
  • 1/4 cup seasoned breadcrumbs
  • 2 tsp parsley (fresh finely chopped or dried)
  • 1 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 4 dashes Worcestershire sauce (divided in half)
  • 2 Tbsp olive oil
  • 4 Tbsp butter (divided in half)
  • 1 onion (thinly sliced)
  • 2 cups beef broth
  • 1 Tbsp corn starch (mixed in small bowl with a little cold water)

In a bowl combine the ground meat, breadcrumbs, parsley, garlic powder, salt and 2 dashes of the Worcestershire sauce. Divide into 4 portions and shape into patties.

Heat a skillet over a medium heat with the olive oil and 2 Tablespoons of butter. Add the patties to the skillet and cook for about 4 minutes on each side. Remove from pan and set aside.

Add the rest of the butter to the skillet. Add the onions and cook until the onions are softened, about 5 minutes. Then add beef broth. When mixture starts to boil add the cornstarch/water mixture, stirring constantly to thicken. Add other 2 dashes of Worcestershire sauce and stir. Reduce heat to low.

Add patties back into gravy mixture and continue cooking for 5 minutes. Serve with the onion gravy on top of patties. Enjoy.
